<p>Since seeing it featured in her <a href="http://www.beckyhiggins.com/blog/2011/12/12-videos-of-christmas-no-4/" target="_blank">12 Videos of Christmas</a>, I pulled up the recipe and it’s been there in the background while I got busy with other online activities.</p>
<p>I love chocolate cookies, and mint chocolate is a household favorite – Andes Mints being one of the brands I love.<u></u><u></u></p>
<p>It is probably not a coincidence that I saw Andes Mints the one time I accompanied my Mom for grocery shopping two weeks ago.<u></u><u></u></p>
<p>At the time, I successfully kept myself my buying a package or two. But this recipe is the perfect excuse to go get some.<u></u><u></u></p>
<p><u></u><u></u></p>
<p>The thing is, I haven’t baked anything in over a year. Since moving companies, in fact.<u></u><u></u></p>
<p>Christmas has always been a time for cooking and baking. Families would be doing so much because they have people over, or they make stuff to give and sell.<u></u><u></u></p>
<p>I was like that for several Christmases in the past ten years. I loved spending hours baking goodies even when I know that at the end of it all, none would be left for me to eat because they’re all orders and I only make enough to cover orders. Being so busy in the kitchen gave me sleepless days and nights because I still had my regular job to attend to.<u></u><u></u></p>
<p>I loved it.<u></u><u></u></p>
<p><u></u><u></u></p>
<p>Again, the thing is, I haven’t baked anything in over a year.<u></u><u></u></p>
<p>My stuff is all over the place. I’ve got ingredients that have likely spoiled already.<u></u><u></u></p>
<p>Measuring spoons and cups have been used for other purposes.<u></u><u></u></p>
<p>Our kitchen isn’t ready for my baking.<u></u><u></u></p>
<p>So in order to get baking, I first have to be organized.<u></u><u></u></p>
<p>Organize and declutter my baking supplies, and hopefully our entire kitchen area while I’m at it.<u></u><u></u></p>
<p><u></u><u></u></p>
<p>That’s what’s keeping me from baking.<u></u><u></u></p>
<p>I’m so lazy to do the work so I can get to what I love to do.<u></u><u></u></p>
<p>Let’s see if I can get over it today. Or this week.<u></u><u></u></p>
<p>Besides, it would be nice to give away some homemade cookies.</p>

<p>Got the recipe from the amazing Pioneer Woman, and her blog posts are awesome to view using the iPad. It definitely beats any recipe card! <img src='http://verabear.net/wp-includes/images/smilies/icon_wink.gif' alt=';)' class='wp-smiley' />  I baked this cake twice over the weekend. The first time was for Alfred&#8217;s mom&#8217;s surprise birthday party. I had never made it before then, and didn&#8217;t get to taste it before show time, so I was so relieved and happy that all who got a piece of it were happy with every bite <img src='http://verabear.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>It was so moist and yummy that I decided that we had to make another batch the next day so my parents could have it too. The next photos are from Sunday&#8217;s baking session.</p>

<p>Tres Leches cake is so easy to make! Preparation doesn&#8217;t take too long and there&#8217;s not too much to measure. The mixture was so light and fluffy that it won&#8217;t stress you out mixing <img src='http://verabear.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p style="text-align: justify;">I used to be afraid of separating egg whites from the yolks, but I didn&#8217;t do so bad. Specially on this second go. It was part of the fun! The real feat? Not getting any of the shells in the cake! haha <img src='http://verabear.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Anyway, the whites had to be separated from the yolks because they needed to be dealt with differently. First went the yolks, beaten until it doubled in volume and turned a pale yellow. Vanilla and some sugar was added in too. I mixed it lightly with the flour mixture first.</p>
<p style="text-align: justify;">Next went the egg whites, this was another fun part even though the mixer pretty much did the work. Beat at high-speed with some sugar, until soft peaks form. Fold it in with the flour and egg yolk mixture. Even back in high school, folding mixtures was my favorite part of the baking process.</p>

<p style="text-align: justify;">As soon as it all combined, I plopped the entire mixture onto one greased pan, and baked it in a 350-degree oven for 35 minutes. Alfred&#8217;s my tester, so he&#8217;s the one doing the toothpick test on the cakes.</p>

<p style="text-align: justify;">The mixed three milks are then poured all over the cake as soon as it cools. It&#8217;s a sponge cake so it&#8217;s meant to absorb liquids. Of course, because there&#8217;s  a lot of liquid to hold in, some of the milk spilled over to the sides of the cake. Not to worry, because in as little as 30minutes later, all that would be gone, re-absorbed by the sponge.</p>
<p style="text-align: justify;">No photo here, but my favorite part is making the icing and putting it on the cake. I hadn&#8217;t made icing like that before and it is so easy (both to make and to apply). While waiting for the cake to cool, and then again for the milk to be absorbed, I chopped the maraschino cherries that went on top of the cake. The red is such a nice contrast to the white frosting. We also had some canned strawberries to add variety.</p>

<p>I also wanted to join in with Music Monday, but I can&#8217;t even preview the YouTube video I wanted to show. It&#8217;s a video of Firewoman, written and performed by local band Hungry Young Poets. The band is no longer together and the lead singer is now doing a solo act. They launched when I was in highschool, and this particular song came out on my freshman year at university. A friend who also loves music gave me the lyrics to this song, and I sang it to audition for a music (based) organization. I love singing this song. <p>For some reason though, Baking Life on Facebook is working just fine. <em>Hirap mag load ng ibang sites, </em>but the application goes on without any hitch. Haha! <img src='http://verabear.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>But enough of my Internet woes.</p>
<p>Remember the <a href="http://verabear.net/2010/09/weekend-bake-a-thon/" target="_blank">chocolate sheet cake</a> I made on Friday? Well, the recipe calls for Buttermilk. It&#8217;s something that&#8217;s not available in the smaller groceries around here. Good thing the Pioneer Woman also shared the substitute for buttermilk!</p>

<p>The Pioneer Woman already has step by step photos along with <a href="http://adf.ly/6wBR" target="_blank">the recipe</a> so I won&#8217;t be posting similar ones. I do have to show these though, my favorite steps in the making of chocolate sheet cake:</p>

<p>See that buttery goodness? In making the cake, we had to melt butter twice. Once for the cake itself, cocoa powder is added to this. And second, for the icing. Mmmmm, I love the smell of melted butter. This was one of the boyfriend&#8217;s jobs for the day, butter melter, haha <img src='http://verabear.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p>Finally, wet and dry ingredients mix! I used to dread this part when baking brownies because the mixture tends to get quite heavy. If you do it by hand, it can get pretty tiring. For this cake though, it&#8217;s very light and easy. I didn&#8217;t have to use my mixer for this one.</p>
<p>It was so easy to bake this cake but it didn&#8217;t exactly turn out perfect. Our floor is uneven, hence, the oven&#8217;s uneven too. We ended up with a sheet cake that was thinner on one end, and thicker on the other. A friend of Alfred&#8217;s cousin who got to taste the cake at Theo&#8217;s birthday bash commented that it had a tad too much of vanilla. I personally couldn&#8217;t detect it, but I think it&#8217;s because I was using vanilla oil and we put a little too much considering there was vanilla on the cake and the icing as well. My version also doesn&#8217;t have pecans on it. Not because we&#8217;re allergic to nuts, but because we didn&#8217;t have any. I think the nuts would balance the sweetness so we&#8217;re definitely going to get some for next time.</p>
<p>But the biggest thing is this: I didn&#8217;t feel like it was <em>the best chocolate sheet cake ever. </em> <img src='http://verabear.net/wp-includes/images/smilies/icon_sad.gif' alt=':(' class='wp-smiley' />  I used to make chocolate cake and cupcakes with a recipe I modified and I remember that tasting more richer, chocolatier. Probably because it has some coffee in it. But I refuse to give up on this recipe, so I&#8217;ll give it another shot some other time. Don&#8217;t get me wrong though, it tasted great! I packed a few slices for Theo (Alfred&#8217;s cousin), and also a few for my cousin Candy. They share the same birthday <img src='http://verabear.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  I also gave slices to the kids downstairs, specially Hannah whose birthday was the next day, September 18th.</p>
<p><em>Mabilis naman naubos</em>, so I&#8217;m sure it was yummy. Not perfect, but good. Maybe the next time I try it, it would be perfect. Haha <img src='http://verabear.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>The next day, I baked <em>the </em>yummiest thing I&#8217;d baked in a long time. That was a perfect cake. Haha <img src='http://verabear.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  But I&#8217;ll share that some other time. Second, because I baked three cakes in three days! It was sooo much fun, the cakes were light to make, and the boyfriend was my assistant. And all three turned out too good not to share.</p>
<p>So no, I didn&#8217;t go on a <em>real </em>vacation, no pools or beaches or <a href="http://www.atvmagonline.com/">atv</a> rides. I was indoors almost the whole time, but baking is such good therapy that it completely de-stressed me. <img src='http://verabear.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>What&#8217;s with the bake-a-thon? Special people in our lives celebrated their birthdays and we chose to honor them by making cakes. Friday, 17th of September was my cousin Candy&#8217;s birthday, as it was Alfred&#8217;s mom and cousin Theo. We made Pioneer Woman&#8217;s Chocolate Sheet Cake. She calls it <em>the </em>best chocolate sheet cake ever so I really had my hopes up for this one.</p>

<p style="text-align: justify;">The next day, we decided to make another cake to bring to the surprise party for Alfred&#8217;s Nanay. She&#8217;s not into sweets and not a big chocolate fan so we opted for something else. Tres Leches Cake. I also used PW&#8217;s recipe.</p>

<p style="text-align: justify;">I fell in love with Tres Leches. And all who tasted it, loved it. We loved it so much we decided to make another one today so my parents and my brother could taste it too. Also because we only had one teeny slice of the cake last night at the party, hehe.</p>

			<content:encoded><![CDATA[<p>I don&#8217;t know how many times I&#8217;ve mentioned this before: I&#8217;m a sucker for second-hand books. Sunday&#8217;s Greenhills date would not have been complete without checking out BookSale. We walked out of there with almost a thousand pesos worth of reading material. Haha.  I&#8217;ve said it before, with the books we have in this house, we would be wise getting into business to <a href="http://www.sellbackyourbook.com/">sell used books</a>.</p>

<p>Apart from this pile, we got one for the boyfriend, and a PC Utilities magazine too. That last one turned out to be a good find but I&#8217;ll blog about it more some other time. Maeve Binchy is one of my favorite authors, the last one of hers that I read is Quentins.</p>
<p>I was excited with this particular find:</p>

<p>And I almost didn&#8217;t get it. After all, I still haven&#8217;t really baked anything out of <a href="http://verabear.net/2009/11/get-cooking/" target="_blank">The Pioneer Woman Cooks</a> which I finally got back in February, and it&#8217;s been a long time since I took out my <a href="http://verabear.net/2008/12/weekends-at-mid-week/" target="_blank">Field Guide to Cookies.</a> And then there&#8217;s also my <a href="http://verabear.net/2008/12/weekends-at-mid-week/" target="_blank">Hello, Cupcake!</a> book that&#8217;s sitting in a dark cabinet. I just don&#8217;t want this one to meet the same fate. Besides, it&#8217;d be a waste of money to buy something and not use it.</p>
<p>But I opened it, and well, couldn&#8217;t put it back on the shelves:</p>

No need to copy the recipe onto an index card. <img src='http://verabear.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  The photos are great too. The deck makes for a nice gift. The box I got isn&#8217;t mint condition though (2nd hand remember), it&#8217;s breaking apart at the seams, but I don&#8217;t mind.</p>

			<content:encoded><![CDATA[<p>As I was Entrecard hopping today, I hopped through <a href="http://pinaybackpacker.com/2009/08/manilas-best-kept-secret-restaurants-promo-from-nbs/" target="_blank">Pinay Backpacker&#8217;s blog</a> about Manila&#8217;s Best Kept Restaurant Secrets. It&#8217;s a book available at the National BookStore, about the many  wonderful places to dine in and around Metro Manila. You see, I love browsing through the baking books section, and it shares the stands with cookbooks and other books on restaurants, wining and dining.</p>

<p>I had been tempted to get tear this book open, and checkout the restaurants they were suggesting. It has a map somewhere there and I checked out their recommendations for QC, my city. There were only two! Is this for real? Maybe I didn&#8217;t check hard enough? But it is quite interesting. Go buy the book, then lend it to me, okay? <img src='http://verabear.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>But I&#8217;m mentioning this today, because seeing Pinay Backpacker&#8217;s post reminded me of what was going through my mind while I was browing through that section. I had wanted so badly to learn more about baking. There were so many baking books there that looked so attractive to me. But I could not justify the cost of buying any one of them when I still have not gone through <a href="http://verabear.net/2008/10/the-art-soul-of-baking/" target="_blank">The Art &amp; Soul of Baking</a>, which <a href="http://verabear.net/2008/12/christmas-came-a-few-weeks-early/" target="_blank">the boyfriend gave me for Christmas last year</a>. Only when I finish through it, I told myself, would I allow myself the pleasure of another baking book. I also have The Field Guide to Cookies, and Hello! Cupcake.</p>
<p>I saw these two on the racks, and I got even more inspired to devote time for baking:</p>

<p>The second isn&#8217;t really just about baking, but a cook book. I don&#8217;t cook. But looking at cookbooks just makes me want to start learning. Seriously. </span></span></p>

<p>I don&#8217;t know if anything will come out of this really, even the boyfriend sorta doubts that I&#8217;ll really learn to cook. It might seem easier to build a house, than to get me to cooking. Haha. Yeah, only if you get a <a href="http://www.azchampion.com/">manufactured home</a> (something that also always fascinates me, think Brad Pitt and his Make It Right/The Pink Project).  But who knows. It&#8217;s never too late to learn a new skill.</span></span></p>

			<content:encoded><![CDATA[<p>Finally, here are the photos of my second (and successful) attempt at making cinnamon rolls! I made these last night, and there are only about three or four pieces left. These really were perfect. The bread was soft and tasty too.</p>
<p>The first step was to warm the milk, sugar and vegetable oil mixture. Last week, I think I overdid this part and there was some curdling going on so I made sure I watched it closely and transferred it to a bowl to cool:</p>

<p style="text-align: justify;">Alfred was with me at that point, but he was already growing impatient and wouldn&#8217;t agree to wait 45mins to an hour for the mixture to cool down. Next step is to mix in the yeast, and then to add in flour after a minute or so. This is how the dough looked after leaving the dough to rise for about an hour:</p>

<p style="text-align: justify;">Doesn&#8217;t look much does it? That&#8217;s because I only made half the original recipe .</p>
<p style="text-align: justify;">Flash back to my attempt last week. Here&#8217;s how the dough looked after mixing, and after an hour:</p>

<p style="text-align: justify;">At that point I&#8217;d already punched it down and mixed it a bit. But take a closer look and you&#8217;ll know that the dough overflowed!</p>

<p style="text-align: justify;">Next was a bit of kneading and then rolling out the dough. This is a challenge because we don&#8217;t have a decent countertop for this purpose. This turned out to be my work area:</p>

<p style="text-align: justify;">I used a cookie sheet. This turned out okay but I couldn&#8217;t roll the dough thin enough because the rolling pin handles would hit the sides of the pan. Which explains why my first try is quite thick:</p>

<p style="text-align: justify;">I knew at this point that it was a success. First time I tried this, it didn&#8217;t look this way. It was too soggy then!</p>
